In a pan over low heat, add 1/2 cup of cashew nuts, 1/3 cup of walnuts, 1/3 cup of almonds, 1/2 cup of pumpkin seeds, and 1/4 cup of sunflower seeds. Toast for 5 minutes.
Once done toasting, transfer to a bowl. Add 1/3 cup of black raisins, 2 tablespoons of sesame seeds, 1 tablespoon of nigella seeds, 1/4 teaspoon of salt, 1/2 teaspoon of cinnamon powder, 1/2 cup of almond flakes, 1 tablespoon of chia seeds. Mix until well combined.
Add 1 egg white and 3 tablespoons of honey. Mix until well incorporated. These will help bind the ingredients.
Line a baking sheet with parchment paper. Place a cookie cutter and add some of the mixture. Use a small object with a flat tip to press down the nuts. Make 18 to 20 cookies with the mixture.
Place inside the oven and bake at 302F or 150C for 12 to 15 minutes. Once done baking, let it cool down. Serve and enjoy!
