Preheat your oven to 350 degrees F. Next, rinsed and drained 1 can of chickpeas, then transfer them to a large bowl. Add 1 tbsp oil, 1 tsp dried dill, 1 tsp garlic powder, 1/2 tsp onion powder, and 1/4 tsp salt. Mix well, then transfer to a baking sheet. Place them in the preheated oven and bake for 30 minutes. For the dressing, combine 1/2 cup of plain Greek yogurt, 1/2 juice of a lemon, 1/4 cup chopped dill pickles, 2 tbsp dill pickle brine, 1/2 tsp dried dill, 1/2 tsp garlic powder, 1/4 tsp onion powder, and 1/4 tsp salt. Mix well.

Now, it’s time to assemble the salad. Combine 2 cups of finely chopped kale, 2 cups of shredded green cabbage, 1 cup of shredded red cabbage, 1 cup of finely chopped cauliflower florets, 1 cup of finely chopped radish, and 2 tbsp chopped fresh dill in a large mixing bowl. Toss everything to combine, then pour the dressing. Once everything is well combined, transfer it to a serving plate, topped it with the roasted chickpeas, then serve.
