Ingredients:

  • 1 tsp butter (or olive oil)
  • 4 large egg whites
  • 1/2 tsp coarse salt
  • chopped herbs (parsley, chives, chervil)
  • cooked spinach, chopped (optional)
  • freshly grated cheese (parmesan, ricotta salata, manchego)

Directions:

Step 1

Crack four large eggs and separate the yolks from the white. Season the egg whites with 1/2 tsp salt and whisk until fluffy. Next, heat 1 tsp olive oil in a medium-sized skillet, then pour the beaten egg whites. Shake the skillet back and forth while stirring it frequently, then run the spatula along the side of the omelet to loosen the eggs.

Step 2

Now, add the chopped herbs of your choice: parsley, fresh chives, chervil, etc. Then, lift the side over the left in one swift motion.
