Ingredients:
Pineapple Salsa:
- 1 & 1/2 cups chopped pineapple
- 1 red bell pepper, finely diced
- 1/4 red onion, finely diced
- 2 tbsp chopped fresh cilantro
- 1 lime, juice
Garlic Shrimp:
- 1 lb peeled shrimp
- 1 tbsp all-purpose flour
- 2 tsp paprika
- 1/4 tsp ground cayenne pepper
- 4 tbsp butter
- 1 tbsp oil
- 6 garlic cloves, minced
- 1 tbsp chopped fresh parsley
- 1/2 lemon, juice
- salt and freshly ground black pepper
Directions:
Step 1
In a bowl, add 1 & 1/2 cups of chopped pineapple, one diced red bell pepper, 1/4 chopped red onion, 2 tbsp chopped fresh cilantro, and juice of one lime. Stir all together and set it aside. Now, combine 1 tbsp of all-purpose flour, 2 tsp paprika, 1/4 tsp ground cayenne pepper, and salt and black pepper to taste. Mix well, then dump the shrimp and give them a good toss. (Make sure to pat the shrimp dry with a paper towel first).

Step 2
Add 4 tbsp butter and 1 tbsp oil in a pan over medium-high heat. Once the butter is fully melted, add the minced garlic and cook until it’s fragrant, then add the shrimp. Arrange them in a single layer and cook each side for two minutes or until they become brown. Just before the shrimp is fully cooked, squeeze half a lemon and garnish with some chopped fresh parsley.
