Prepare all the needed ingredients.
In a medium-sized bowl, crack in 6 eggs and sprinkle in 3 tbsp of parsley, green onions, or chives. Then, season the eggs with salt and pepper. Whisk until well incorporated.
In a skillet, melt 1 ¼ tbsp of butter over medium-low heat. Once the butter has melted, pour 1/3 of the egg mixture onto the skillet. Give the skillet a swirl until it forms a thin layer covering the entire surface. Heat the eggs for no more than 2 minutes until the eggs firm up, then sprinkle ½ cup of the grated cheese.
Cover the skillet with a lid and allow it to steam for roughly a minute until the cheese has melted. While the eggs are still warm, work quickly and place the eggs on the working area with parchment paper laid on. Then, add 2 ham slices per egg. Using the parchment paper, roll the eggs and ham tightly as leverage and repeat until the eggs and ham are all used up.
Serve the ham and egg roll with a drizzle of hot sauce of your choice and garnish with finely diced cilantro or parsley.
