Looking for a unique snack or appetizer? If so, you have found the right recipe. I first tried out this recipe a couple months ago at a friends house and I never expected guacamole and onions rings to go so well together. They are the perfect snack for dinner parties, cookouts, potlucks, and even are a great side for any dinner. I enjoyed them so much, and once I found out how easy they were to make, I decided to make a batch the following week.
A few months ago, I was over at my friends house for a backyard cookout that had a wide variety of sides accompanying the burgers that were served. As I was filling my plate, a tray of the guacamole onion rings caught my eye, even though I was not quite sure what they were. My friend informed me what they were, and insisted that I try one immediately. Once I tried my first bite, I was amazed how good they were and added a few more to my plate. This weekend, I plan on bringing some to a super bowl party that I am attending since they are so easy to make. I will gather the following ingredients:
Start by finding a large bowl and mashing the avocados in it. Then add the lime, tomato, cilantro, garlic, salt, and cili powder into the bowl and stir well.
Cut you onion into rings and place them on a pan separated from each other. Next, fill the onion rings with the guacamole that you just made and press it down tight. Once complete, put in freezer until solid.
Take three bowls and fill one with beaten eggs, one with flour, and one with bread crumbs. Now take your guacamole onion rings and dip them in to each of the bowls, beginning with the eggs, next the flower, and then the breadcrumbs. Repeat this step twice if needed.
Fry the onion rings until golden brown and then serve with lime and sour cream
