Ingredients:

  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 3 cloves of garlic, minced
  • 1 tbsp grated ginger
  • 1 tsp crushed red chili flakes
  • 2 tbsp brown sugar
  • 1 juiced lime
  • 2 stalks lemongrass, white parts only (roughly chopped)
  • 12 boneless, skinless chicken thigh

Directions:

Step 1

To start, combine 1/4 cup olive oil, 1/4 cup soy sauce, 3 cloves of minced garlic, 1 tbsp grated ginger, 1 tsp crushed red chili flakes, 2 tbsp brown sugar, one juiced lime, and 2 stalks of chopped lemongrass in a bowl. Mix well and set it aside.

Step 2

Next, prep the chicken and coat them with the mixture thoroughly. After this, refrigerate them in a covered container for at least four hours (or 24 hours ideally). When you’re ready to cook the chicken, preheat the grill first to 400 degrees F. After this, remove the chicken from the marinade and shake off any excess lemongrass or liquid. Now, grill the chicken for about ten to twelve minutes on each side. Serve and enjoy!
