Ingredients:

  • 3 – 4 lb Roma tomatoes (cleaned, halved, and cored)
  • 1/2 medium onion
  • 3 – 4 large cloves of garlic
  • 1/4 tsp each of salt and pepper + more
  • 2/3 tbsp olive oil
  • 1 quart of chicken broth
  • 1/4 cup packed fresh basil leaves, divided
  • 2-3 fresh sprigs of oregano, divided
  • 1/4 tsp garlic powder
  • 1 tsp sugar
  • croutons
  • grated cheddar cheese

Directions:

Step 1

In a bowl, add the sliced tomatoes, chopped onion, four cloves of garlic, 1 tsp each of salt and black pepper, and 2/3 tbsp of olive oil. Mix together and make sure all the tomatoes are nicely coated. Transfer the tomatoes to a parchment-lined baking tray making sure they are positioned cut side up. Place them in a preheated oven at 400 degrees F and roast for 45 minutes to an hour. After roasting, let the tomatoes completely cool, then transfer them to a large soup pot over medium heat. Pour 1 quart of chicken broth, then turn the heat up and bring it to a simmer and cook for five minutes. After this, blend everything using an immersion blender until smooth texture.

Step 2

Add half of the fresh basil leaves and 2-3 sprigs of oregano and continue blending. Turn the heat to medium and season the soup with salt and black pepper, 1 tsp of sugar, and 1/4 tsp of garlic powder. Give it a good stir and bring everything to a simmer and cook for two minutes. Now, add the other half of the fresh basil and cook it for another two minutes. Transfer the soup to a serving bowl and add some croutons on top and grated cheese. Place it in a 375-degree oven for a couple of minutes or until the cheese is melted and bubbly.
