I love barbecue, so when I came across this recipe from Katerina Petrovska on Youtube, I knew I had to try it. Sure enough, it’s one of the best barbecue recipes I’ve ever tried! The chicken is just perfect; it’s flavorful and covered in sweet barbecue sauce. What’s more, you can add your favorite veggies inside the foil and grill it away! 

Ingredients:

  • 8 aluminum foil sheets (large enough to wrap around one chicken breast)
  • 4 oz (each) boneless, skinless chicken breasts
  • 1/2 cup barbecue sauce
  • 1 zucchini, sliced into thin rounds
  • 1 red, green, or yellow bell pepper (cut into thin strips)
  • 8 asparagus spears
  • salt and fresh ground pepper, to taste
  • extra virgin olive oil

Directions:

Step 1

Get a sheet of foil and place one chicken breast. Season both sides with salt and ground black pepper, then place the asparagus and chopped zucchini on the sides as well as the bell peppers. Pour some extra virgin olive oil all over and brush your favorite barbecue sauce.

Step 2

Wrap the foil, making sure it will not drip, then repeat the whole process to the remaining chicken breasts. After this, place the foiled chicken breasts on a baking sheet and put them in the oven at 400 degrees F for 25 minutes or until done. (You can also grill it. Cook it for 20 to 25 minutes, and it’s done when the thermometer reads 165 F.)
