Step 1
Poke holes on your pie crust, then pre-bake it on your oven before you start making the chocolate filling. In a saucepan over medium heat, combine the sugar, cornstarch, salt, and shaved chocolate, then gradually add the milk while consistently stirring for about 15 to 20 minutes or until the chocolate is melted and the mixture becomes thick and bubbly. Once bubbling, set a timer for 1 minute and stir as the chocolate mixture simmers, then remove it from the heat. To temper the egg yolks, simply scoop about 4 to 5 tablespoons of the chocolate mixture and add to 3 egg yolks, then stir it constantly. Once the yolks are tempered, stir in the egg yolk mixture into the saucepan with the hot chocolate filling. Put the saucepan back into the stove and bring it to a simmer, then cook it for 1 more minute while stirring consistently. Remove it from the stove, then stir in the vanilla and almond extract, and then pour the mixture in the pre-baked pie shell.

Step 2
Add 1 tablespoon of cornstarch, 2 tablespoons of sugar, and ½ cup of water in a small saucepan, then mix them well over medium heat, and continue stirring until it thickens. Put the saucepan in a pan filled with water to cool down. Mix together the egg whites and cream of tartar in a mixing bowl, then beat it until frothy, add 2 tablespoons of sugar, and beat for 10 more seconds. Add 2 more tablespoons of sugar, then continue beating until peaks begin to form. Add the cooled mixture into the meringue, and continue beating them together until stiff peaks form. Spread the meringue over the cooled pie filling evenly, then lightly chop the top of the meringue to make peaks on top of the pie. Bake in a preheated oven at 400°F for about 10 to 12 minutes or until the tip of the meringue are nicely browned. Remove the pie from the oven and let it cool completely for several hours before slicing.
