Ingredients

  • white onion (sliced)
  • ground black pepper
  • parsley flakes
  • beef seasoning
  • ground beef
  • 1 – 2 can/s of diced tomatoes
  • okra (cut into small pieces)
  • 1 bag of mixed vegetables
  • 1 1/2 cup of beef stock
  • 2 jalapeno (cubed)
  • 1 bell pepper (cubed)
  • 1 potato (peeled and sliced into pieces)

 

Note: You can adjust the amount of ingredients based on your preference. You can add more corn and tomatoes if you want.

Instructions

Step 1:

Start by adding the ground beef into your pan over medium-low, followed by half an onion(sliced), parsley flakes, black pepper, and beef seasoning. Mix and break it into pieces. Cook until nice and brown over medium-low.

Step 2:

Add the diced tomatoes (you can add one or two cans), sliced okra, mixed vegetables, beef stock, chopped jalapeno, half of an onion (sliced), and chopped bell pepper. Season it with more beef seasoning. Mix all ingredients until well combined. Cover it with the lid and let it come to a boil. If you think it’s too dry, you can add more beef stock or water.

Step 3:

Make a taste test and adjust seasonings if needed. Add the sliced potatoes. Make sure it’s soaked into the soup. Place the lid back and continue cooking on medium-low until the potatoes are soft.

Step 4:

Serve it in individual bowls and enjoy it while hot!
