I always love homemade pastry goods, so when I discovered these cinnamon coffee muffins from Cara’s Recipes on YouTube, I knew I had to try them. And boy, these goodies become an instant hit! Preheat your oven to 350 degrees F and grease your muffin pan with non-stick cooking spray. Next, in a large mixing bowl, combine 1/3 cup granulated sugar, 1/3 cup oil, 1 tsp cinnamon, 1/2 cup milk, 1 large egg, and 1 tsp vanilla extract. Mix well. After this, add 1 1/2 cups of self-rising flour and fold until just combined. Set aside. Next, make the streusel topping. In a medium bowl, add 1/4 cup light brown sugar, 1 tsp cinnamon, and 3 tbsp flour. Mix well, then add 2 tbsp cold unsalted butter. Work on it with your hands and break up the butter into the mixture until crumbly.

Now, scoop out the batter evenly in each muffin cup, filling them until two-thirds full. After this, divide the streusel over the top and gently press into each muffin. Once done, place the muffin pan in the preheated 350 degrees F oven and bake for 9 to 12 minutes or until the muffins are light golden brown. In the meantime, make the icing. In a small bowl, combine 1/4 cup powdered sugar and 1 1/2 – 2 tsp milk. Mix well until smooth. Once the muffins are done baking, let them cool down for 15 minutes, then drizzle the icing on each top. Serve and enjoy!
