Ingredients:

  • 16 oz jumbo shells
  • 1 large white onion, chopped
  • 1 red bell pepper, chopped
  • 12 oz smoked sausage, chopped
  • 5 cups shredded medium cheddar
  • 1 cup shredded parmesan
  • 7 tbsp butter
  • 1/2 cup all-purpose flour
  • 3 cups of whole milk
  • 1 cup of heavy whipping cream
  • salt, pepper, smoked paprika

Directions:

Step 1

Boil the jumbo shells for 9 minutes, then strain, and set them aside. Next, add some vegetable oil in a large pan, then add the chopped smoked sausage. Cook and brown the sausage and set aside. In the same pan, add 7 tbsp butter, chopped white onion, and chopped red bell pepper. Saute everything for two minutes, then add 1/2 cup all-purpose flour. Whisk for a few minutes until no flour is visible. After this, gradually add 3 cups of whole milk and 1 cup of heavy whipping cream while whisking. Continue to mix until it thickens.

Step 2

After about four minutes, stir in 5 cups of shredded medium cheddar and season with some ground black pepper, salt, and smoked paprika. Now, add the cooked jumbo shells and smoked sausage to a large mixing bowl, then pour the sauce. Toss everything well, then transfer it to a greased 9 x 13 baking pan. Sprinkle 1 cup shredded parmesan and 1 cup cheddar. Place it in a 325 degrees F oven and bake for 15 minutes. After baking, let it cool down for five minutes and serve. Enjoy!
