Pour some vegetable oil into a deep frying pan and cook the chicken legs until golden brown on both sides.
Pour 2 cups of water into the chicken. Season with salt, pepper, 1 teaspoon of thyme, and 1 teaspoon of basil. Cover with the lid and let it simmer for 15 minutes.
Dice the onions and chop the carrots and garlic cloves.
In a new saucepan, add some vegetable oil and butter. Once the butter is melted, add the diced onions. Fry for about 1 minute, then add the carrots. Cook for another 2 minutes. Next, add half of the chopped garlic cloves and fry for just 30 seconds.
Add 2 tablespoons of flour to the pan, and mix everything together. Add the tomato puree and give another mix.
Add the tomato mixture to the chicken and mix well until well incorporated.
In the same pan used in the tomato mixture, melt some butter and fry the remaining chopped garlic for 1 minute. Add 1/2 cup of white wine and cook for 2 minutes.
Pour the wine mixture into the chicken and let it simmer for about 5 minutes with the lid on.
Chop the parsley and sprinkle it on top of the chicken. Turn off the heat and serve. Enjoy!
