For the ketchup sauce:
Place the peeled shrimp in a bowl and rinse with cold water. Pat dry with a paper towel. Make sure to dry them as you can. Transfer to a dry bowl. Add the cornstarch and mix until coated.
Make the soy sauce. In a large bowl, add ketchup, soy sauce, dark soy sauce, salt, and sugar. Mix until well combined.
Place a pan over medium-high heat. Add enough oil to coat the bottom of the pan. Once the oil is hot, add the coated shrimp to the pan in a single layer. Cook until golden brown and crispy on both sides. Transfer to a plate.
Lower the heat to medium. Add the ginger slices and cook for a few seconds, then turn the heat low and add the garlic. Once the garlic is just about to turn golden, add the ketchup sauce. Stir fry for a few minutes, then add some rice wine. Mix then cook the alcohol off.
Add the shrimp and the green onions to the pan. Quickly toast the shrimp until coated with the sauce. Serve immediately. Enjoy!
