I tried making this a few weeks ago and they did not disappoint, I might even make it again this week, it’s that delicious! Ingredients:

  • 500g (1 pound) Mushrooms, button or Swiss brown/cremini
  • 50g (3 tbsp) Unsalted butter, melted
  • 1 tbsp Olive oil
  • 2 cloves Garlic, finely minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ tbsp lemon juice, optional
  • 1 tsp fresh thyme leaves or parsley, optional

Directions:

Step 1

Prepare a large mixing bowl, then place the washed and cleaned mushroom in it. Add in the oil, melted butter, and garlic. Then, season the mushrooms with salt and pepper. Using a rubber spatula, toss the mushrooms around until they are well mixed and seasoned.

Step 2

Transfer and spread them on a baking tray, then pop it in a preheated oven at 220°C/450°F, and roast for about 25 minutes – make sure to not toss or turn the mushrooms while roasting. Once done, remove them from the oven, then push the mushrooms together onto one side of the tray, then drizzle it with lemon, and sprinkle with thyme, toss until evenly coated. Serve immediately and enjoy!
