Combine 1 3/4 cups of bread flour, 1 tsp dry yeast, 1 1/4 tbsp sugar, 3/4 tsp salt, and 1/2 cup of water in a large bowl. Mix well until you form a dough. Once done, transfer the dough to a surface and knead until it comes together. Once done, incorporate 1 tbsp butter into the dough. Continue to knead until the dough becomes smooth. Now, shape it into a ball and transfer it to a large bowl. Cover it with a long wrap and leave it at room temperature for 40 minutes to one hour. In the meantime, make the garlic butter.

Add 1/4 cup butter and grated garlic in a bowl, then mix together. Set aside. Back to the dough, flour your working surface, and transfer the dough. Flour your dough and divide it into eight equal pieces. After this, shape the pieces into little balls, then cover them with cling wrap. Let them rest for 15 minutes. After 15 minutes, remove the gas from each dough, then roll them out again into balls. Rest them again for 15 minutes, until the dough doubles the size.
Now, transfer them to a parchment paper-lined tray and flour them each. After this, slit a cross on each top, then add the garlic butter mixture. Place them in a preheated 350 degrees F oven and bake them for 15 minutes. After baking, sprinkle some dried parsley on top as desired.
