  • 2.5 lbs chicken livers
  • 6 garlic cloves
  • 2 tsp salt, divided
  • 1 tsp oregano
  • 2 tsp paprika
  • Freshly ground black pepper to taste
  • 2 cups all-purpose flour
  • Vegetable oil for frying


First, add garlic cloves, salt, and oregano in a mortar or a food processor to turn into a paste. Season the chicken liver with garlic paste and black pepper. Next, heat frying oil in a pan to 375F. Dredge the chicken livers in the seasoned flour in batches. Place the coated chicken livers into the hot oil, and fry until crisp and golden brown. This takes about 6 to 8 minutes. Line them on a plate with a paper towel so the oil can soak and drip into the towel.

Overall, this is one of the only ways I find chicken livers a little manageable to eat. I’m not a big fan of chicken livers, but I love the fried batter. Anything fried makes it better.
