French onion soup has always been a big favorite of mine, but I have to admit, I have never thought of stuffing a chicken breast with it. However strange this idea may sound, it looks totally delicious. You can’t actually put the soup into the chicken but you can put the French style caramelized onions into the chicken then pour the soup over it and braise the stuffed chicken breasts in the oven. I can’t wait to make this for my family because they love chicken and they are always asking if I know any other ways to cook it, than my usual methods, so I am planning a major surprise for them with this delightful dinner dish.

Ingredients:

  • 2 tablespoons unsalted butter
  • 4 large onions (thinly sliced)
  • Pinch of salt and pepper for seasoning
  • 2 teaspoons fresh thyme (chopped and divided)
  • 2 tablespoons white wine (sherry, or balsamic vinegar)
  • 2 cloves of garlic (minced)
  • 1/2 cup beef broth (or stock, divided)
  • 1 tablespoon olive oil
  • 4 boneless, skinless chicken breasts
  • 2 teaspoons of garlic powder
  • 1 teaspoon ground thyme
  • 1 cup shredded gruyere cheese (mozzarella or your favorite cheese will work fine)
  • 4 tablespoons freshly grated parmesan cheese
