Turkey Sausage:
Burrito Filling:
In a large mixing bowl, add 1 lb ground turkey, 1 tsp salt, 1 tsp black pepper, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp cayenne pepper, 1 tsp smoked paprika, 1 tsp oregano, 1 1/2 tsp rubbed sage, and 1 tbsp brown sugar. Mix everything until well combined, then set aside. Next, crack eight eggs, then add 2 tbsp milk. Whisk together until combined. After this, dice the bell peppers, onion, and spinach.
Heat 1 tbsp oil in a large skillet. Add the homemade turkey sausage and cook until brown. Set aside. Add another tablespoon of oil to the same pan over medium-high heat, then add the onions and bell peppers. Season with some salt, then stir every few minutes to ensure even cooking. Once the onions become translucent, add 2 cups of frozen shredded hash browns and the chopped spinach. Stir everything together.
Once the spinach is wilted, make a large well in the middle, add 1 tbsp oil, turn down the heat to medium, then add the whisked eggs. After the eggs have solidified into lightly scrambled eggs, season them with some salt and black pepper, then mix everything together until well combined. Finally, stir in the cooked sausage.
Now, assemble the burritos. Take out the tortillas, lay a group out, and place two huge spoonfuls of the filling onto one side of the tortilla. On top of the filling, add a little bit of shredded cheese. After this, roll over the top, fold in the sides, and continue to roll to the ends. Place it in a casserole, seam side down, then repeat until you fold all the burritos. Once done, place the burritos in the freezer and freeze them until you’re ready to consume them.
