If you’re going to ask me what’s my favorite way of cooking my eggs in the mornings, I’ll definitely say this recipe from Bari on Youtube. This egg souffle is so fluffy that when I’ve tried it, I never went back to how I cooked my eggs. It’s also delicious and super fun to make – I’m sure your family will love it also! Crack two eggs in a bowl, then separate the yolks from the whites. Whisk the egg whites with a handheld mixer until frothy, then add 1 tbsp of sugar and continue mixing until firm peaks form. Once peaks form, add the yolks and salt and continue mixing until incorporated.

Put the pan over very low heat and add some cooking oil. (Spread the oil thinly with a crumpled kitchen paper towel). Once the oil is heated through, pour the batter and spread it evenly. Cover it with a lid and cook for five to seven minutes. After seven minutes, gently fold it in half, hold it in place using a spatula, and allow it to cook for a couple more minutes, then flip it to the other side. Cook this side as well.
