I always scramble or boil eggs, but last week I wanted to cook something different. I saw this fluffy egg breakfast cup recipe by Breakfast For One on Youtube and instantly gathered all the ingredients I need. It was super easy to make – no doubt one of the best muffins I have ever tried. Each piece is moist, fluffy, and savory. It definitely took my usual food to the next level. In a bowl, crack 6 eggs and add 1/4 cup of grated parmesan cheese, 1/4 cup of heavy cream, a few pinches of salt, and freshly ground black pepper. Beat the egg mixture until smooth and slightly frothy.
Preheat the toaster oven to 365 degrees Fahrenheit.
Generously grease a 6-muffin tin with butter.
Place the bacon strips into a microwavable tray and cover them with a paper towel and a microwavable lid. Microwave them for about 4 minutes. Once done, drain the excess fat.
Finely chop the green onions and the cooked bacon. Place them on a plate with 1/3 cup of shredded cheddar cheese separately.
Add the cheddar cheese evenly into each muffin cup, followed by the bacon pieces and green onions.
Pour the egg mixture into each muffin cup, but make sure to leave a little room at the top.
Place inside the oven and bake at 356 degrees Fahrenheit for about 20 minutes.
Tuck in the overflow of the egg mixture while it’s still hot, then loosen the edge of the muffins before removing them.
Remove from the muffin tray and serve. Enjoy!
