I always feel guilty when there is food waste in our house. So, I’ve made a list of things on how to preserve or reuse them. Sharing is caring. Here’s the best ripe banana solution that I’ve found, shared by Qiong Cooking on YouTube—turning ripe bananas into fluffy bread. It’s delicious and efficient at the same time.
Ingredients:
Directions:
Preheat the oven to 340F.
Prepare all the needed ingredients.
Remove the peels of 2 ripe bananas and place them in a bowl. Using a fork, mash the bananas thoroughly until they have a paste-like texture. Add in ½ tbsp instant yeast, 90 ml milk, and 2 tbsp melted unsalted butter. Mix until everything is well combined.
Then, add in 2.25 cups of bread flour or all-purpose flour and ½ tsp salt. Stir all the ingredients using a spatula until you make the dough. Cover the bowl with a lid or plastic cellophane and let the dough rise for about an hour, or until the dough has doubled in size.
Time to prep the counter. Sprinkle as much flour all over the counter as possible to prevent the dough from sticking. Slide your dough on the counter and sprinkle some flour on top of the dough. Knead the dough and cut it into 2 pieces. Then, round each dough ball and divide it into 8 equal parts. Make each small dough round by kneading it.
Grease the baking pan with unsalted melted butter and carefully place all of the round pieces. Cover with plastic cellophane and set aside in a warm place for about 50 minutes to ferment and rise. When done, brush on milk or egg wash on top of the round pieces.
Place each baking tray in the oven and let them bake for about 13–22 minutes at 350F.
Carefully remove the trays from the oven and, while they’re still hot, brush on a layer of melted butter.
Enjoy!
