Pancakes are one of the best breakfast food. There are a lot of delicious variations out there, but have you tried this fluffy apple pancakes recipe by My Favorite F Word? It’s incredible! I love apples, and incorporating them into the pancake batter, makes it a delightful meal that I will always look forward to in the morning. Read on or watch the video below for full instructions.

Make the strawberry sauce. Place the strawberries in a small pot over heat. Add 2 tablespoons of sweetener and let it come to a boil. Once boiling, reduce the heat, mix, and let it simmer until it thickens. Transfer to a bowl and set aside.
Grind the oats and set aside. Next, peel the apples and slice them very thinly. You can also grate them. You’ll get fluffier pancakes if you grate them.
In a large bowl, crack 2 eggs and add 1 cup of sugar-free vanilla yogurt, lemon zest, 1 teaspoon of vanilla extract, and 3 tablespoons of egg whites. Whisk together until it becomes smooth.
Add the ground oats and 1 teaspoon of baking powder to the mixture. Mix it all together again.
Add the sliced apples and mix until well-coated with the mixture.
Preheat a large non-stick pan and grease with butter. Add a scoop of the batter. Once the edges are set and it is browned, flip and cook the other side until fluffy.
Serve on a plate with strawberry sauce, greek yogurt, and syrup. Enjoy!
