Pancakes are one of the best breakfast food. There are a lot of delicious variations out there, but have you tried this fluffy apple pancakes recipe by My Favorite F Word? It’s incredible! Ingredients:
- 1 cup of old-fashioned oats
- 1 cup sugar-free vanilla yogurt
- 2 eggs
- 3 tablespoons of egg whites
- 8 oz apple (1 large or 2 medium or 3 small apples)
- 1 teaspoon of baking powder
- 1 teaspoon of vanilla extract
- zest of half a lemon
Strawberry sauce:
- 2 cups of strawberries (frozen – roughly chopped)
- 2 tablespoons of sweetener
For garnish:
- syrup
- Greek yogurt

Instructions:
Step 1:
Make the strawberry sauce. Place the strawberries in a small pot over heat. Add 2 tablespoons of sweetener and let it come to a boil. Once boiling, reduce the heat, mix, and let it simmer until it thickens. Transfer to a bowl and set aside.
Step 2:
Grind the oats and set aside. Next, peel the apples and slice them very thinly. You can also grate them. You’ll get fluffier pancakes if you grate them.
Step 3:
In a large bowl, crack 2 eggs and add 1 cup of sugar-free vanilla yogurt, lemon zest, 1 teaspoon of vanilla extract, and 3 tablespoons of egg whites. Whisk together until it becomes smooth.
Step 4:
Add the ground oats and 1 teaspoon of baking powder to the mixture. Mix it all together again.
Step 5:
Add the sliced apples and mix until well-coated with the mixture.
Step 6:
Preheat a large non-stick pan and grease with butter. Add a scoop of the batter. Once the edges are set and it is browned, flip and cook the other side until fluffy.
Step 7:
Serve on a plate with strawberry sauce, greek yogurt, and syrup. Enjoy!
