In search of pasta recipes that are simple to prepare, where you can simply toss things together and have something to eat afterwards, I came across Recipes pasta tutorial.  When I’m on the road but still want to have something hearty and warm for lunch, this is something I consider essential. With its 6-step penne pasta recipe, Recipes on YouTube gave me with the solution I sought. I only required a few basic items, and there you have it! I was able to whip up a fantastic pasta dinner in a short amount of time.

Ingredients: 

  • 1 lb shrimps, peeled and deveined
  • ¾ lb asparagus, snap the ends off
  • ½ lb penne pasta, cooked & cooled
  • 8 oz red or yellow bell peppers, sliced
  • 2 cloves garlic, finely minced
  • Zest and juice of 1 lemon
  • 3 tbsp olive oil
  • Salt and ground black pepper, to taste

To serve:

  • Parmesan cheese, grated or powdered
  • Basil
  • Lemon wedges

Directions: 

In a large mixing bowl, marinate the shrimps by combining it with the lemon juice, lemon zest, and garlic and set aside for 15 minutes.

Cook the shrimps in olive oil in a frying pan over medium heat until they are cooked through. Remove the shrimps from the pan and set it aside.

The red pepper and asparagus should be sautéed in the same pan until they’re soft.

Combine the shrimps and cooked pasta in a large mixing bowl. Toss everything together.

Seasoning with salt and pepper to taste is optional. Decorate with parmesan cheese and basil leaves.
