Ingredients:

  • 5 cups of water (or chicken broth)
  • 2 chicken breasts, chopped into small pieces
  • 5 cups of water
  • 2 sweet potatoes, chopped
  • 1 can of black beans
  • 1/2 yellow onion, diced
  • 1/2 red bell pepper, diced
  • 4 garlic cloves, minced
  • 1/2 cup corn
  • 3 tbsp chicken bouillon
  • 1 tsp Mexican oregano
  • 1/2 tsp nutmeg
  • 1 tsp ground black pepper
  • 1 tbsp avocado oil
  • 2 tbsp butter
  • toppings: corn chips, avocado, lime, sprinkle of cilantro, choice of spice

Directions:

Step 1

In a large pot over medium-high heat, add 1 tbsp olive oil and 2 tbsp butter. Add the chopped chicken and sear them for three to four minutes. After this, add the diced onions, and continue to cook for another two minutes. Next, add five cups of water followed by the chopped sweet potatoes, black beans, corn, red bell peppers, garlic, 3 tbsp chicken bouillon, 1 tsp ground black pepper, 1 tsp Mexican oregano, and 1/2 tsp nutmeg. Place the lid over the pot and cook for 15 to 20 minutes.

Step 2

After 20 minutes, turn off the heat, and your soup is done. Top it with some corn chips, avocado, lime, sprinkle of cilantro, and spice of your choice. Serve hot and enjoy!
