Preheat the oven to 350 degrees F. Next, remove the filling of the Oreo, then blitz the cookies into fine crumbs. To that, add 4 tbsp unsalted melted butter. Mix well and transfer it to a springform pan. Work on it, pressing the crumbs down firmly to the bottom. Pre-bake the crust for ten minutes. After baking, allow it to cool to room temperature. (Turn your oven’s heat down to 325 degrees F at this point.) In the meantime, make the cheesecake.

In a mixing bowl, add 3 packages of cream cheese and whisk it until smooth. Next, add 1 cup of granulated sugar, 1 tsp vanilla extract, and 1/3 cup brewed espresso. Continue whisking until combined. After this, add the eggs one at a time while whisking. Now, transfer the mixture into the cooled crust. Place the springform pan in a baking tray, add water outside, then bake it at 325 degrees F for 65 to 85 minutes.
While waiting, make the chocolate ganache. Add 1 cup of chocolate chips to a heat-proof bowl followed by 1/2 cup of hot heavy cream. Let it sit for a minute, then stir to combine. Cool it for five to seven minutes before adding it to the cheesecake.
