This enchilada cornbread casserole also known as tamale pie is the perfect family dinner. It is a recipe by Simply Mama Cooks on Youtube, made with different savory flavors, a little bit of spice and homemade cornbread mix. For the cornbread mix:

Add 2 tablespoons of oil into a pan and put the ground beef. Next, add the beef bouillon, ground cumin, onion powder, garlic powder, chili powder, and cracked black pepper. Break the meat down and mix all the ingredients.
Add the all-purpose flour and water. Mix it and let it simmer until the sauce thickens. Taste and add more seasoning if needed. Turn off the heat and let it set and cool for 10 minutes.
Make the cornbread mix. In a bowl add yellow cornmeal, all-purpose flour, baking powder, sugar, and salt. Give the dry ingredients a good mix. Next, add one large egg, oil, creamed corn, milk, shredded cheddar cheese, and jalapeno. Combine all ingredients.
Grease a 12 x 8 baking dish with butter. Add half of the cornbread mixture and spread evenly on the bottom of the pan. Next, add the ground beef mixture. Sprinkle the 1 1/4 cup of shredded cheddar cheese on top. Pour the remaining cornbread mix into the baking dish. Spread evenly to cover the cheese and beef.
Bake uncovered in a preheated oven at 400 degrees F for about 22 to 25 minutes. Once done, let it cool for 10 minutes before serving.
