I love banana bread, but I came across Cooking With Shirani eggless whole wheat banana bread tutorial on YouTube which is up my alley. In some cases, you might not have any eggs left in the fridge, but want to bake something. This is a perfect recipe if you want to make banana bread that requires no eggs. Plus, there are some people out there who are allergic to eggs. I like whole wheat recipes, but I’ve always made regular banana bread. I want to try this recipe out and see if it would change my mind to use whole wheat flour. Banana bread is one of my favorite things to bake because it’s perfect for breakfast if I don’t want to cook anything, or a pick me up snack throughout the day.

Ingredients:

  • 2 large ripe bananas
  • 6 tablespoons melted butter
  • ¾ cup brown sugar
  • ½ cup (4oz) sour cream
  • 1 teaspoon vanilla extract
  • 1 ½ cups whole wheat flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • ½ cup chopped walnuts

Directions:

First, peel your ripe bananas, place them in a large bowl, and mash them with a fork or a potato masher. Add melted butter, brown sugar, sour cream, and vanilla extract. Mix everything together until thoroughly combined.

Next, sift your dry ingredients to the wet mixture and stir. Do not over mix. Then, fold in walnuts to the mixture and save some to sprinkle over on top before baking. Transfer to a greased loaf pan and bake for 40 minutes on 350F. If it’s not cooked, cover with foil and bake until the toothpick becomes clean. This prevents the bread from becoming too brown.

Overall, this eggless whole wheat banana bread is so easy and convenient to make. I bake very often so I have most ingredients at home beside the wheat flour. I need to explore with wheat flour a little more, and I think this is the perfect recipe to attempt.
