I always have this every morning, but it’s perfect any time of the day. It may be simple, but it’s delicious, and most of all, it’s filling. Ingredients:

  • 1 zucchini
  • 2 potatoes
  • 1 tsp salt
  • 1 1/2 cups of flour
  • 1 1/2 cups of milk
  • 3 eggs
  • a handful of parsley, chopped
  • 2 stalks of spring onion, chopped
  • 1 tsp baking powder
  • 3 tbsp vegetable oil, for frying

Directions:

Step 1

To start, grate one zucchini and transfer it to a bowl. Next, grate the two potatoes and put them in the bowl with the grated zucchini. Stir them together to combine, then drain all the liquid from them using a strainer (or any method you like as long as you drain all the juice). After this, put them back in the mixing bowl and add 1 tsp salt, 1 1/2 cups of sifted flour, and 1 1/2 cups of milk. Mix well and set aside.

Step 2

In another bowl, beat three eggs and add them to the zucchini mixture and mix. Now, chop the onion spring and parsley and add them to the mixture. Lastly, add 1 tsp baking powder and 3 tbsp vegetable oil, then mix well. Fry the pancakes on both sides until golden brown. After frying, brush some melted butter all over the pancake and serve.
