This is also perfect if you have zucchinis and potatoes that you don’t know what to do with. I’m sure your family will love this recipe as much as my family does. To start, grate one zucchini and transfer it to a bowl. Next, grate the two potatoes and put them in the bowl with the grated zucchini. Stir them together to combine, then drain all the liquid from them using a strainer (or any method you like as long as you drain all the juice). After this, put them back in the mixing bowl and add 1 tsp salt, 1 1/2 cups of sifted flour, and 1 1/2 cups of milk. Mix well and set aside.

In another bowl, beat three eggs and add them to the zucchini mixture and mix. Now, chop the onion spring and parsley and add them to the mixture. Lastly, add 1 tsp baking powder and 3 tbsp vegetable oil, then mix well. Fry the pancakes on both sides until golden brown. After frying, brush some melted butter all over the pancake and serve.
