Ingredients:

  • 2 cups all-purpose flour
  • 1 & 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp coarse salt
  • 1 & 1/3 cups light brown sugar
  • 1 & 1/2 tsp ground cinnamon
  • 2 cups of zucchini, grated
  • 1/2 cup walnuts or pecans (optional)
  • 2 large eggs
  • 1/2 cup cooking oil
  • 1/2 cup milk
  • 1 & 1/2 tsp vanilla extract

Directions:

Step 1

In a bowl, add 2 cups of all-purpose flour, 1 & 1/3 cups light brown sugar, 1 & 1/2 tsp baking powder, 1/2 tsp baking soda, 1 tsp salt, 1 & 1/2 tsp ground cinnamon, and 2 cups of grated zucchini. Mix together until well combined. In another bowl (or mixing jug), add 2 large cracked eggs, 1 & 1/2 tsp vanilla extract, and 1/2 cup cooking oil. Mix well and pour it over the dry ingredients mixture, then add 1/2 cup of milk. Fold together.

Step 2

Now, add 1/2 cup of walnuts or pecans and mix. Pour this over your loaf pan lined with parchment paper. Bake it in a preheated oven at 250 degrees F for 45 to 50 minutes.
