Ingredients:

  • 80 ml lukewarm milk
  • 1 tsp (3g) instant yeast
  • 2 & 1/8 cup (300g) of bread flour
  • 1 tsp (5g) sea salt
  • 1/8 (30g) cup of sugar
  • 1 whole egg
  • 1/2 cup whipping cream
  • 1/3 cup (50g) dried cranberries

Directions:

Step 1

Mix 80 ml of lukewarm milk with 1 tsp instant yeast, then leave it for 5 minutes. Next, in a bowl, add 2 & 1/8 cups of bread flour, 1 tsp sea salt, and 1/8 cup of sugar. Mix well. After this, add 1/2 cup whipping cream, 1 cracked egg, and the milk/yeast mixture. Place it in a stand mixer, turn it on, and mix until dough consistency. Next, proof the dough at room temperature for 60 minutes or until the dough doubled in size. While waiting, get 1/3 cup of dried cranberries and chop them into small pieces. Get a circular pan, grease it with some butter, place a baking sheet at the bottom, then grease it again. Next, flour a surface and transfer the dough to it. Divide the dough into 5 equal parts. After this, roll each dough in a circular motion, then let them rest for 15 minutes.

Step 2

After 15 minutes, get a piece of dough and roll it flat with a rolling pin. After flattening the dough, make a vertical line from the half of the dough up to the edge using a dough scraper. Place a good amount of chopped dried cranberries into the dough, fold both edges, then roll it. Place it on the side of the pan. Do this step to the remaining 4 doughs. Cover the pan with a cling wrap and proof the dough at room temperature for 60 minutes or until the dough doubles in size. After 60 minutes, brush the dough with some fresh milk. Place it in a preheated oven at 340 degrees F and bake it for 17-20 minutes.
