White Bean Salad Ingredients
- 2 cans of white beans (drained and rinsed well)
- 1 English cucumber (diced)
- 10 oz grape or cherry tomatoes (sliced in half)
- 4 green onions (chopped)
- 1 cup of chopped fresh parsley (chopped)
- 15 to 20 mint leaves (chopped)
- 1 lemon (zested and juiced)
- salt and pepper to taste
- 1 teaspoon of za’atar
- 1/2 teaspoon of sumac
- 1/2 teaspoon of aleppo pepper
- extra virgin olive oil
- feta cheese (optional)
How to Make White Bean Salad
Step 1:
In a large mixing bowl, add the drained and rinsed white beans, diced cucumber, cherry tomatoes, chopped green onion, chopped parsley, and chopped mint leaves.
Step 2:
Zest one lemon, then slice it in half. Squeeze the lemon juice, then add to the salad along with the zest.
Step 3:
Add all the seasonings and drizzle extra virgin olive oil. Mix everything until well combined. Make a taste test and adjust seasonings if needed. Sprinkle feta cheese on top if preferred. Serve and enjoy!
