Whenever we host a Christmas gathering at home I always make sure to choose the best dishes and food that I know are well-loved by my guests who are coming over to celebrate. One thing that I also make sure never to miss out having on the table is a delicious and festive cake.

Step 1
Preheat your oven to 350°F, then in a large mixing bowl, add the flour, baking powder, and salt, and whisk them together until uniform. Separate the eggs while they’re still cold, then place the yolks in a large bowl along with ¼ cup of sugar, and beat them over high speed until thickened.
Step 2
Add the vanilla extract and water, then give them a good stir to combine, and set the mixture aside. In the bowl of a stand mixer, add the egg whites and cream of tartar, then whip them over medium speed for about 1 minute until foamy, and then gradually add the remaining sugar while whipping continuously until shiny and stiff peaks form.
Step 3
Fold in about ⅓ of the flour mixture to the egg yolks, then add the egg yolk and remaining flour into the egg whites, and fold them just until incorporated making sure not to overmix. Transfer the batter to a baking pan, then spread it out smoothly, and place it in the preheated oven to bake for about 30 to 32 minutes or until a toothpick inserted at the center comes out clean.
Step 4
Let the cake cool completely, then remove it from the pan, and while waiting, prepare the icing and berries. Mix together the powdered sugar and heavy cream until smooth, then pour it over the cooled cake, and let it sit for about 40 to 60 minutes.
Step 5
In a small bowl, whisk the egg whites until no longer stringy, then dip the berries, and coat them in sugar. Transfer them to a baking sheet lined with parchment paper, then let them dry for about 25 to 30 minutes, and put them on top of the cake. Serve and enjoy!
