Ingredients:

  • 2 large chicken breasts, halved
  • 1 tsp salt, divided
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil, divided
  • 1 tbsp butter
  • 8 oz mushrooms, thickly sliced
  • 1/4 cup sun-dried tomatoes, drained and chopped
  • 1/4 cup green onion, green parts, chopped
  • 3 cloves of garlic, minced
  • 1 1/2 cups heavy whipping cream
  • 1/2 cup parmesan cheese, shredded
  • 2 cups fresh spinach

Directions:

Step 1

To start, prep and cut all your ingredients accordingly. Thickly slice your mushrooms, mince three cloves of garlic, drain and chop the sun-dried tomatoes, and chop the green onions. Set them aside. Next, prep your chicken. Carefully cut them in half lengthwise, then season both sides with 1/2 tsp salt, 1/4 tsp ground black pepper, and 1/2 tsp garlic powder. Now, set a large skillet over medium heat and add 1 tbsp of olive oil and 1  tbsp of unsalted butter. Once the butter melts, add the chicken to the skillet in a single layer. Saute them for three to five minutes on both sides. After cooking, set the chicken aside on a plate, then add another tablespoon of oil to the pan.

Step 2

Saute your mushrooms for five to seven minutes, then add the chopped sun-dried tomatoes, green onions, and minced garlic. Season with 1/2 tsp salt and 1/4 tsp black pepper. Saute, stirring constantly for another minute. Next, stir in 1 1/2 cups of heavy whipping cream, then sprinkle 1/2 cup of shredded parmesan cheese.  Stir to combine and bring everything to a light boil. After this, reduce the heat and simmer for another two minutes. Season the sauce with some salt and ground black pepper to taste. To finish, stir in two cups of fresh baby spinach leaves, then add the chicken back to the pan. Serve and enjoy!
