Chicken Salad with Mascarpone Dressing
Tuna Salad
In a large mixing bowl, add the tuna, mayonnaise, relish, shallots, celery, garlic powder, salt, and pepper, then mix them all together until well combined, and assemble your sandwich. Lay the bottom piece of bread first, then lay a piece of lettuce on top followed by a scoop of tuna salad, and place some slices of tomatoes. You can also add cheese if you like, then serve, and enjoy!

Egg Salad
Fill a pot with water, then bring it to a boil before placing the eggs, cover the pot, and continue to let them cook for about 14 minutes. Drain off all the water, then give them an ice water bath or cool them in running water, peel the eggs, and cut them in half. Scoop out the yolks into a large mixing bowl, then mash them up, and dice the egg whites. In the bowl of egg yolks, add the mayonnaise, mustard, relish, shallots, celery, salt, and pepper, then mix them all together until well combined, and assemble the sandwich however you like.
Chicken Salad with Mascarpone Dressing
Pour the cream into a saucepan, then place it on a stove over medium to medium-high heat, and bring it to a bare simmer. Squeeze the lemon over the cream, then give them a good stir, and once it has thickened, let it cool down completely, then put it in the fridge, and let it chill. Slice the chicken into small chunks, then put it in a large mixing bowl, and add the grapes, sweet corn, nuts, green onions, fresh parsley, salt, and pepper, then mix them all together until well combined, and assemble the sandwich however you like.
