Ingredients:

  • 12 mandarin oranges, divided, for dressing and salad
  • 2 cups of strawberries, sliced
  • 5 kiwi
  • 1 pineapple, peeled, cored, and cut into bite-size chunks
  • 3 mangoes, peeled, pitted, and cut into bite-size chunks

Citrus Poppy Seed Dressing

  • 1 medium lemon
  • 1 lime
  • ¼ cup of honey
  • ½ tsp of ginger paste or grated fresh ginger
  • ½ tsp of poppy seeds

Directions:

Step 1

Wash and dry the lemon, lime, and 2 mandarin oranges well, then zest them over a mixing bowl or measuring cup, and then cut each fruit in half before squeezing the juice in the measuring cup or bowl. Add the honey, ginger, and poppy seeds, then whisk them all together until well combined and incorporated, and set it aside. You can also cover it and place it inside the refrigerator instead if you don’t want to serve them immediately.

Step 2

Slice the strawberries and kiwi, then separate the remaining oranges into sections, and then peel and core the pineapple. Peel and pit the mango, then cut them into bite-sized chunks, and place the fruits in a large mixing bowl. Pour the prepared dressing over the fruits, then toss them all together until well coated and combined, and place them inside the refrigerator. Allow them to chill for about 30 minutes, then serve, and enjoy!
