This triple berry crumb cake from Natashas Kitchen is one of the best cake recipes you’ll ever try. I make this every now and then, and it’s my go-to whenever I crave a fruity and zesty cake. It’s best for afternoon tea, but you can totally have this any time of the day. Try this today and see for yourself.
Preheat your oven to 350 degrees F. Next, in a large bowl, combine three cracked large eggs and 1 cup of sugar. Whisk on high speed using an electric mixer for about five minutes. After this, add 1/4 cup of light olive oil and mix until just combined. In another bowl, add 2 cups of all-purpose flour and 2 1/2 tsp baking powder. Mix well, then add half of it to the batter and stir. Now, mix in 1 tbsp of lemon zest and 1 tsp vanilla extract, then 1/3 cup seltzer water. Finally, add the remaining flour and stir just until everything is combined.

Line a 9″ springform pan with parchment paper and butter the bottom and the sides. After this, transfer the batter to the pan, spreading the top evenly. Top it with sliced mixed berries of your choice. Set aside for awhile while you make the crumb topping. In a medium bowl, combine 3/4 cup all-purpose flour, 1/4 cup granulated sugar, 4 tbsp softened unsalted butter, and 1/4 tsp sea salt. Rub the butter and the flour between your fingertips to create crumbs, then sprinkle it over the top of the cake evenly. Put it in the oven at 350 degrees F and bake for 45 to 50 minutes. After baking, let it rest in the oven for 15 minutes before removing. Serve and enjoy!
