Ingredients:

Cake

  • egg whites
  • egg yolks
  • 3 tbsp + 3 tbsp caster sugar
  • 1 tsp vanilla extract
  • ½ tsp cream of tartar
  • ¾ tsp baking powder
  • ¾ cup all-purpose flour
  • 1½ tbsp cornstarch
  • ¼ cup of milk

Milk Bath

  • ½ cup whole milk
  • ½ cup whipping cream or evaporated milk
  • ½ cup sweetened condensed milk
  • ½ vanilla bean

Topping

  • ¾ cup whipping cream
  • 2 tbsp powdered sugar, optional

Directions:

Step 1

Separate the egg white and egg yolks into 2 large mixing bowls, then in the bowl of the egg whites, add the cream of tartar, and once it starts to dense foam, gradually add the 3 tablespoons of sugar while whipping them all together until combined and stiff peaks form. In the bowl of the egg yolks, add the other 3 tablespoons of sugar, vanilla, and milk, then give them a good whip until foamy, sift together the flour, baking powder, and cornstarch, and continue to mix them until combined but make sure to not overmix.

Step 2

Add 2 tablespoons of the egg white mixture to the yolk mixture, then mix them until well combined, and put all of the egg yolk mixture into the egg white mixture. Gently fold them together until combined, then pour the batter into an 8x-inch cake pan lined with parchment paper and greased with nonstick cooking spray, and spread the batter evenly. Tap the cake pan on the counter a few times to remove any trapped air bubbles, then place it in a preheated oven at 160°C or 320°F, and let it bake for about 20 minutes or until a toothpick inserted at the center comes out clean.

Step 3

Once done baking, remove it from the pan, then let it cool down slightly before unmolding, and then let it cool down completely. In a small saucepan, add the milk, condensed milk, whipping cream, and scraped vanilla bean, then heat it up on a stove over low-medium heat for about 2 minutes, and stir until well combined. Place the cake on parchment paper, then transfer it to a cake pan, and poke the holes all over the cake using a fork.

Step 4

Pour the prepared milk bath all over the cake, then cover it with plastic wrap, and place it in the refrigerator to chill for at least 2 hours or up to overnight until the milk is soaked up. Once ready to serve, beat the whipping cream until medium-stiff peaks, then remove the cake from the pan, and add the whipped cream on top smoothing it out evenly. Using a serrated knife, trim the edges, then cut it into 9 squares equally, serve, and enjoy!
