Cold nights call for a bowl of some delicious soup, and this homemade tomato soup recipe from Preppy Kitchen on Youtube will surely warm up your bones. It’s rich and creamy and just bursting with a lot of flavors. It’s also easy and quick to make. Learn the full recipe by watching the video below.
First, prep the ingredients. Chop 1 yellow onion and mince 6 cloves of garlic. In a big pot, add 2 tbsp unsalted butter and 3 tbsp extra-virgin olive oil. Set the stove on medium heat and melt the butter. Once the butter is melted, add the chopped onions and stir occasionally for about 8 minutes. Add the minced garlic and by this time, stir them constantly as the garlic burn fast. Cook it for about 5 minutes. After 5 minutes, add 2 cans of whole peeled tomatoes. Next, add 3 cups of chicken stock (It can also be water or any stock you want), 1 tbsp granulated sugar, and 1/2 tsp ground black pepper.

Lastly, add a pinch of salt, dried thyme, and oregano. Stir them in and bring the soup to a boil and let it simmer for about half an hour. (You can add more later to taste.) After it is reduced, pulse the soup until smooth consistency. (You can use an immersion blender, a potato ricer, or a masher for this.) Finish off the soup by adding 3/4 cup of heavy cream and stirring it in to combine. Transfer into a bowl and put some fresh basil over the top.
