Core out the stems of each tomato, then slice a shallow “X” on the bottom skin of each piece, and blanch them in boiling water for about 30 to 60 seconds.
Step 2
After blanching, take them out of the pot with the strainer, and transfer them quickly to the prepared ice bath. Peel off the skin of the tomatoes, then chop the flesh of the tomatoes into small chunks, and set them aside. Step 3
Saute them for about 7 to 8 minutes or until golden and soft, then add the crushed garlic, and continue to saute them for 2 minutes more or until fragrant. Add the chopped tomatoes to the same pot, then season it with salt, and add the oregano and basil. Give them a good mix, then bring the mixture to a boil, and reduce the heat.
Step 4
Allow it to simmer for about 60 to 90 minutes or until the desired consistency, then stir it consistently, and once almost done cooking, add the vinegar. Stir it well to combine and turn off the heat, then puree the tomato sauce until smooth if desired, and transfer it evenly to jars.
