Brussel sprouts are probably one of my favorite vegetables, they are just so easy to cook and they taste good in anything, whether you bake, stir-fry, or even pickle them! Recently, I tried this pickling method by Chris & Kathy on YouTube, the instructions were very straightforward and simple. After only about 3 days, I opened one jar and tried eating the pickled Brussel sprouts, and they were super delicious, and crunchy with just the right amount of spice.
Step 1
Place a large pot on a stove over medium-high heat, then add about 5 cups of distilled vinegar, and 5 cups of water, then add about 7 tablespoons of canning salt. Bring them to a boil and while waiting, prepare the jar and Brussel sprouts. Before you start canning, make sure to sterilize the jar and lids well, then peel off the outer leaves of your Brussel sprouts.

Step 2
Fill the jar with Brussel sprouts, then add the pepper flakes, and a clove of garlic. Scoop out the water and vinegar mixture, and pour it into the jar giving it a half-inch headspace from the rim. Wipe the rims clean, then close the lid. Put the jar in a hot water bath for about 10 minutes, then turn off the heat, and leave it there for another 15 minutes. Take them off the water bath and let them sit for about 3 weeks until all the flavors could set in.
