Step 1
In the mixing bowl of a stand mixer or you can use a hand mixer if you want, add the butter, then beat it until creamy, add the brown sugar, granulated sugar, peanut butter, vanilla, and egg, and continue to beat them together until well combined and incorporated. In a separate mixing bowl, add the salt, baking soda, and baking powder, then mix them all together to combine and add them to the butter mixture. Fold the batter together, then beat them again, and give it another fold.

Step 2
Lay wax paper on your work surface, then scoop the batter and place them into the wax paper in a single layer. Wrap the scooped batter in wax paper, then place it in the refrigerator, and let it chill for about an hour. Transfer the chilled cookie balls to a baking sheet lined with parchment paper, make sure to lay them about 1 to 2 inches apart with 4 cookie balls in a total of 3 rows. Press a fork on each cookie ball in a sliding motion to make a criss-cross pattern, then place them in a preheated oven at 350°F or 177°C for about 10 to 15 minutes. Serve and enjoy!
