Step 1
Preheat your oven to about 400 degrees, then line a large rimmed baking sheet with aluminum foil, and set it aside. Grab another sheet of aluminum foil, then roll it around to make a cylinder out of it, and then wrap the slices of bacon around it to create spiral cannoli shells. Create another cylinder foil if needed, then brush each bacon with some maple syrup. Put it in the preheated oven, and let it bake for about 18 to 20 minutes or until the bacon is nice and crispy.

After the bacon is done baking, remove it from the oven, and let it cool slightly while you’re preparing the filling. In a large mixing bowl, add the heavy cream, powdered sugar, cinnamon, and nutmeg, then beat them all together using a hand mixer until well combined and stiff peaks form. Fold in the ricotta and about a cup of mini chocolate chips, then transfer them to a piping bag. Pipe the cream mixture into the bacon shells and garnish them with more chocolate chips. Serve and enjoy!
