Texas twinkies are probably one of my all-time favorites! I always make sure to include them in our barbecue parties or just about anytime we feel like having some barbecue with the whole family. If you haven’t tried making them yet, then you better change your mind and give this yummy recipe by The Urban Cowgirl on YouTube a try. Surely, your family and friends will love them as much as we did.
Step 1
In a food processor, add the cream cheese, shredded cheese, and chopped brisket, then season them with salt, black pepper, and cumin. Pulse the food processor until well combined. Pop the mixture in the refrigerator and let it chill while preparing the jalapenos. Slice along one side of the jalapeno to create a long slit, then repeat the cut with the other jalapenos. Use a small spoon to scrape off the seeds and ribs of each pepper. Grab the chilled filling mixture, then start filling each piece of jalapeno until near overflowing.

Step 2
Wrap a bacon strip around the stuffed pepper starting from the steam all the way to the tip. Wrap more bacon as needed, then insert toothpicks around the pepper to keep the wrapped bacon in place. Repeat the process with the remaining peppers and bacon strips. Preheat your smoker grill to about 375 degrees temperature, then lay the peppers inside the smoker grill, cover, and let them cook for about 35 minutes. Turn on the broiler of your oven and set it on high, then place the grilled peppers on a baking sheet lined with aluminum foil, and brush them with sweet barbecue sauce until well coated. Broil the, for only about a minute just until the sauce thickens and becomes sticky. Best served hot with additional barbecue sauce or a drizzle of homemade ranch dressing.
