Ingredients:

  • 2 cups of yellow cornmeal
  • 2 tsp of granulated sugar
  • 1 tsp of salt
  • 1 2/3 – 2 cups of boiling water
  • Vegetable oil, for frying

Directions:

Step 1

Place a large or medium-sized pot on a stove over high heat, then fill it with some water, and bring it to a boil. In a large mixing bowl, add the cornmeal and sugar, then scoop up about 2 cups of boiling water, and add it to the mixing bowl as well. Whisk them together until fully combined, thick, and with no more lumps. Heat up some oil on a 10 inches cast iron skillet pan over medium-high heat until the temperature reaches 375 degrees.

Step 2

While waiting for the oil to heat up, scoop up about 2 tablespoons of batter, then gently shape it into patties, and place on a greased sheet pan. Continue shaping the rest of the batter, then start deep frying them until both sides are nice and golden brown. Place them on a plate lined with paper towels to drain off the excess oil, then serve, and enjoy!
