Step 1
First, cut both ends of the pineapple, then peel off the skin, and cut the outside with a diamond pattern, repeat this process with the other pineapple. Place both pineapples in a Ziploc bag, then pour in the Fireball Whiskey, seal the bag squeezing out as much air as you can, then place it in the refrigerator, and let it marinate for at least 2 hours or more, turn it over halfway through the marinating time. You can use any grill to cook the pineapples but if you’re using a propane grill, then set the two outside burners to medium-high and the rotisserie to medium, the temperature should be at about 450°.

Step 2
While waiting for the pineapple to marinate, prepare the sugar mixture. In a mixing bowl, add the raw sugar, brown sugar, and ground cinnamon, then mix them together until uniform and well combined. Once the pineapples are ready, skewer each piece with the rotisserie rod, then secure it in place. Apply the sugar mixture to the outside of each pineapple until covered, then place it on the grill, and cook for about 25 to 30 minutes. Once the pineapples start to look dry, sprinkle more sugar mixture all over the pineapples, then let it cook until the outside is caramelized, and the total cook time has reached 45 to 60 minutes. Carefully slide the pineapples off the skewer and slice them into individual pieces.
