Ingredients:

Chocolate cake

  • 2 cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • ½ cup softened butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 eggs, room temperature
  • ¼ cup sunflower oil
  • 2 tsp vanilla extract
  • 1¼ cup milk, room temperature

Sour cream chocolate frosting

  • ¼ cup butter
  • 14 ounces chocolate, 55% cocoa
  • 1 tsp instant coffee granules
  • ½ tsp hot water
  • ½ tsp salt
  • 1½ cups sour cream, room temperature

Directions:

Step 1

Grease the three 6-inch cake pans with butter, then line them with parchment paper, and dust with flour. In a mixing bowl, sift together the flour, cocoa powder, baking soda, and salt, then set it aside. In a separate mixing bowl, add the butter, sugar, and brown sugar, and then beat them together with a hand mixer until creamy and well combined. Beat in the eggs one at a time making sure to mix them well in between each addition, then add the sunflower oil and vanilla extract, and mix them well until fully combined. Now, add the sifted flour mixture in 2 additions alternating it with the milk, then lightly mix them together just until combined making sure not to overmix, and divide the batter into the prepared pans spreading them evenly.

Step 2

Put them in the preheated oven at 350ºF or 175ºC, then let them bake for about 35 minutes or until fully cooked, and let them cool for 10 minutes before removing them from the pan and transferring them to a wire rack to cool completely. Now, for the chocolate frosting, add the chopped chocolate, butter, and salt in a mixing bowl then dissolved the instant coffee in hot water, and add it to the bowl of chocolate as well. Melt them in a double boiler, then stir them using a spatula to prevent them from burning, remove them from heat, and let them cool for about 5 minutes. Add the sour cream, then mix them together until well combined, and transfer it to a piping bag. Trim off the top of each cake slice to flatten them, then stack them together making sure to spread some frosting in between, and use the rest of the frosting to cover the whole cake.
