I never thought that baking a delicious souffle cheesecake could be this easy! I enjoyed making it but what I loved the most is my family’s reaction upon tasting it. Materials:

  • 3 egg yolks
  • 1½ tbsp sugar
  • 2¾ tbsp cornstarch
  • ¾ cup warm milk
  • 1 tsp vanilla bean paste
  • 1½ tbsp unsalted butter
  • 1 cup cream cheese
  • 2 tsp lemon juice
  • 1¼ tbsp cake flour
  • 3 egg whites
  • 4 tbsp sugar
  • Apricot jam

Directions:

Step 1

Separate the egg yolks from the egg whites, then add sugar to the yolks in a pot, and mix them together until well combined. Add cornstarch, then mix them together before adding the warm milk, and keep on mixing until combined. Next, add the vanilla bean paste, then place the pot on a stove over medium heat, and stir them well to combine. Make sure to stir quickly and continuously as it thickens, then turn off the heat, and mix in the butter. In a mixing bowl, break and whisk the cream cheese until smooth, then mix in the custard cream mixture, sift the flour, add the lemon juice, and continue whisking until fully combined and incorporated.

Step 2

In a separate bowl, beat the egg whites, then add the sugar in 3 additions while beating continuously until soft peaks form. Give the custard mixture another mix before folding it into the meringue, make sure to incorporate them in 2 additions, and fold until well combined. Line a cake pan with parchment paper, then transfer the batter into the cake pan spreading it nicely, and place the pan on top of a larger pan filled with boiled water. Put it in a preheated oven at 150°C or 302°F and let it bake for about 60 minutes. Once done baking, let it cool in the oven, then let it chill in the fridge, unmold, and remove the parchment paper. Transfer the cake to a serving plate, then spread some apricot jam evenly on top, slice, serve, and enjoy!
