  • 6 chicken thighs
  • Salt and pepper, to taste
  • 1 teaspoon garlic
  • 1 teaspoon onion powder
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 teaspoon paprika
  • 6 medium potatoes
  • Olive oil
  • 4 cups spinach
  • ¼ cup butter, unsalted
  • 4 cloves garlic
  • 2 tablespoons flour
  • 1 cup chicken broth
  • ½ cup whole milk
  • ½ cup heavy Cream
  • ½ cup parmesan cheese
  • 1 chicken bouillon cube
  • 3 tablespoons fresh parsley
  • 3 tablespoons fresh basil


Step 1

In a small bowl or plate, mix the salt, pepper, garlic and onion powder, thyme, rosemary, and paprika until well combined. Then, sprinkle and season it all over the chicken thighs, rub it well until both sides are coated with the spice mixture. Wrap the seasoned chicken thighs in plastic cling wrap, then let it marinate in the fridge for at least an hour. Proceed to cut each of the potatoes into 8 equal parts, then transfer them into a baking pan, drizzle them with olive oil, and season with salt and pepper. Partially bake the potatoes in a preheated oven at 400°F or 204°C for about 30 minutes. Heat some oil in a skillet pan, then sear the marinated chicken with its skin side down for about 3 minutes on each side or until golden brown.

Step 2

Remove the chicken when done cooking and set them aside, use the same pan to saute the spinach until they wilt down. Remove the spinach and set aside, then using the same pan, melt the butter, add in the garlic and saute until fragrant, add the flour and cook them while whisking for a minute. Pour in the chicken broth, then let it thicken. Add in the milk, heavy cream, parmesan cheese, chicken bouillon cube, freshly chopped parsley, and basil, then cook them for a minute. Once the potatoes are out of the oven, place the chicken, spinach, and sauce on them. Bake them in the oven for about 35 to 40 minutes until the chicken reaches 165°F or 74°C and the potatoes are fully cooked through. Once done baking, let it sit for 10 minutes before serving.
